A rich and flavorful vegan sauce made with sun-dried tomatoes, almonds, and Vivo Life unflavoured Vegan Protein. Perfect for pasta, vegetables, or pizza.
Ingredients
- 4 sun dried tomatoes
- 2 large tomatoes roughly chopped
- Garlic clove
- 10g nutritional yeast
- 1-2 tsp white miso (optional)
- 130ml water
- Juice of half a lemon
- Big pinch of salt
- 40g almonds
- Big handful of basil leaves with a few saved for garnishing
Directions
- Combine all the ingredients except the Vegan Protein, almonds and basil in a blender. Give a quick blend so everything is combined and smooth.
- Add the Vegan Protein and blend until smooth. Now add the almonds and basil and blend until you get the desired consistency, adding more water if it is too thick.
- Personally we like little bits of almonds in the sauce but you can have it smooth if you wish. Taste to season and finish with a twist of black pepper.
- Serve over hot pasta, vegetables, a pizza base or whatever you choose!
