A delicious and protein-packed pancake tower perfect for a healthy breakfast or brunch.
Ingredients
- 1.5 bananas

60g Self Raising flour
- 40g blueberries
- 120ml plant milk
- Pinch of cinnamon
- 4 tsp almond butter (optional)
Directions
- In a blender, combine all ingredients until smooth.
- Heat a non-stick pan over medium heat. Pour 2 tablespoons of mix onto the pan and cook for a couple of minutes until bubbles form on the surface. Flip the pancake and cook for another minute or until golden brown. Repeat until all batter is used.
- Layer pancakes with sliced bananas and a bit of nut butter, repeat until you created a tower. Enjoy with a drizzle of chocolate syrup!
