High-protein pancakes made with oat and almond flour, cacao powder, and topped with whipped coconut cream, fresh raspberries, banana coins, and almond butter.
Ingredients
- 1/4 cup oat flour (gluten free)

1/4 cup almond flour
- 1/4 to 1/2 cup almond milk

1 serving Vivo Life Perform Plant Protein (Madagascan Vanilla)
- 1 egg or 1 flax/chia egg
- 3 tbsp raw cacao powder
- 1 tbsp maple syrup (optional)
- 1 tbsp coconut oil, plus extra for frying
- Toppings (optional):
- Whipped Coconut Cream
- Fresh Raspberries
- Banana Coins
- Almond Butter
Directions
- 1) Put all your ingredients in a food processor and blend until a smooth batter forms. The amount of milk you use will depend on how thick you want the batter to be. I suggest starting with a 1/4 cup then adding more little by little if needs be.
- 2) Heat a little coconut oil in a frying pan and then fry the pancakes for about one minute each side. They are ready to flip when bubbles appear on the surface. You will need to re-oil the pan for each batch. I got 8 medium sized pancakes from the above ingredients.
- 3) Serve with your favourite toppings. These went really well with raspberries, whipped coconut cream, banana coins and almond butter!
